This course is designed to teach popular regional and multicultural recipes, as well as tips, serving ideas, and a bit of etiquette and customs. 

This class uses natural and old fashioned cooking principles, balanced with modern nutrition.  If you are a vegetarian or on a restricted diet, this class may be difficult for you.  Most of the recipes have been adjusted to fit a somewhat western taste, but remain interesting and as true to their cultures as possible.

Goals:
To further the kitchen skills of good food enthusiasts, and add some variety and fun.
Requirements:
If you have never cooked before, or have some discomfort in the kitchen, you may want to take Cooking Basics, another great class on UniversalClass first.
Reading Materials:
All required reading assignments are available free on the internet, or can be found in the shared files.  They are provided as supplements.  All recipes published in the class, however, are either public domain or the inventions or deductions of the instructor, Nicole Lasher, or family members who have given permission for them to be published, and for financial compensation to be received through her.
Recommended Equipment:
  • A fully stocked kitchen.  What this means exactly will vary by region, but each lesson tells you what you'll need, and what can be substituted for what.
  • (optional) digital camera or conventional camera and scanner
  • (optional) image editing software that will allow you to resize photos to no more than 700x700 pixels
  • (optional) paper and a marker with which one can credit photos of their assignments.
  • If you do not have a camera or a webcam, then I have no way of checking that you did a cooking assignment, so you will need to be more descriptive in the written parts of the assignments.




Course Outline:

Each lesson has an assignment and a quiz, as well as a topic in the forums.

Lesson 1 - Basic Principles and Breakfast

Covers the basic principles of natural cooking, and breakfast dishes.
Lesson 2 - Chai and Hospitality
Making chai, real coffee, and hospitality dishes.  One is a cookie recipe using only honey as a sweetener.
Lesson 3 - Lunch
Salads, Rice, Bento, and other lunchable type foods.
Lesson 4 - Advanced Sandwiching
Bread making and Kebab
Lesson 5 - Soups, Stocks, and Stews
Serious Chicken Soup, Bulgogi, making bone stocks, and Pasta Dumplings
Lesson 6 - Meat
Meat basics, Seasoning Mixes, Pot Roast, and Chicken Biryani
Lesson 7 - Sauces, Starches, and Other Extras
Gravies, Panne Sauce, Risotto, and Rice with Raisins and Almonds.
Lesson 8 - Desserts
Tiramisu, Chocolate Cake, and Fruit Salad
